Icings, frostings and glazes have three purposes. The most obvious is to make your cookies prettier. Secondly, they will give a subtly-flavored cookie a bit more flavor, especially if the icing in question is something like a chocolate glaze or cream cheese frosting. Thirdly, depending on the recipe, they add another dimension to the texture of the cookie. Almost any cookie or dessert can be taken to the next level with a drizzle of some kind of glaze on it.
