Cookie Iron / Waffle Cookies
Cookie and Waffle iron cookies require special tools to bake. This usually takes the form of a cookie iron such as a pizelle iron or a waffle-type iron such as those used for Gauffrettes. While these do require an extra expense to acquire the needed tools, the reward is that they are truly stunning on a cookie plate, and generally achieve a crispness unlike anything baked with other methods. These types of cookie irons can be found at specialty baking shops, but my favorite way to acquire them is to find vintage cookie irons on eBay and Etsy. The majority of the vintage variety require a gas stove, but each recipe below includes links where you can acquire the iron neccessary.
