These Apple Cider Cutout Cookies with Cinnamon Sugar are a flavorful cutout sugar cookies use packets of instant hot spiced cider to give them an apple cider flavor. A dusting of cinnamon sugar enhances the taste and gives them a bit of crunch.
Ingredients
- For the cookies:
1 cup unsalted butter, at room temperature
1/2 cup brown sugar, packed
1/2 cup granulated sugar
1 large egg
1 tsp. vanilla extract
1/2 tsp. baking powder
3 packets hot apple cider mix (such as Alpine)
1/4 teaspoon salt
3-1/2 cups all-purpose flour
- For the cinnamon sugar topping:
1/4 cup granulated sugar
1-1/2 tablespoons ground cinnamon
Directions
- Beat the butter, brown sugar, and granulated sugar until light and fluffy. Mix in the egg, vanilla, baking powder, cider mix and salt until well incorporated. Stir in flour, one cup at a time. Sandwich the dough between two sheets of parchment paper and roll out until 1/4″ thick. Chill the flattened dough for at least 30 minutes. While the dough is chilling, mix the cinnamon sugar. Once the dough is hard to the touch, cut out shapes and place them on a parchment-lined baking sheet. Sprinkle each cookie with cinnamon sugar. Refrigerate for at least 30 minutes. Preheat oven to 375F. Bake cookies for 7-9 minutes. Do not allow edges to brown. Cool on the pan for 10 minutes then remove to a wire rack to cool completely.
