A soft and chewy pumpkin cookie redolent of pumpkin spice and topped with a yummy, rich cream cheese frosting. You can double this recipe and make pumpkin sandwich cookies as well!

Ingredients

  • For the cookies
  • 1-1/2 cups all-purpose flour

  • 1 teaspoon pumpkin pie spice

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon baking soda

  • 1 teaspoon cream of tartar

  • 1/2 cup salted butter, at room temperature

  • 1/2 cup granulated sugar

  • 1/4 cup light brown sugar, packed

  • 1 egg yolk, at room temperature

  • 1 teaspoon vanilla extract

  • 1/4 cup pumpkin puree, canned or homemade

  • For the frosting
  • 1/2 cup salted butter, at room temperature

  • 1 (8-ounce) package cream cheese, at room temperature

  • 3 teaspoons vanilla extract

  • 1 teaspoon pumpkin pie spice

  • 4 cups powdered sugar

Directions

  • Make the cookies
  • In a medium mixing bowl stir together the flour, pumpkin pie spice, cinnamon, baking soda, and cream of tartar. In a large mixing bowl beat together the butter, granulated sugar, and brown sugar until creamy. Stir in the egg yolk, vanilla extract, and pumpkin puree. Stir the dry ingredients into the wet ingredients until just combined. Cover and refrigerate for 30 minutes. Preheat oven to 350°F and line two baking sheets with parchment paper. Drop heaping tablespoons of dough onto prepared baking sheets (or for more evenly-rounded cookies use a 2-tablespoon cookie scoop) about 2 inches apart. Bake for 10 to 13 minutes or until the cookies are set. Allow to cool thoroughly on wire racks.
  • Make the frosting
  • Beat together cream cheese, butter, and vanilla until well blended. Stir in pumpkin pie spice, then add powdered sugar one cup at a time, mixing to fully incorporate. Frost thoroughly cooled cookies and then garnish with a light dusting of additional pumpkin pie spice, cinnamon or freshly-grated nutmeg.
