This recipe will make about 1/4 cup of your own pumpkin pie spice blend that you can use in any recipe calling for pumpkin spice. It’s very customizable. While it’s built on a base of cinnamon, ginger and nutmeg, the other spices can be left out if you don’t like them or simply don’t have them in your pantry. You can easily double this recipe if you think you’ll use more.
It’s best to use fresh spices, but if your spices have been around for a while, just use a little bit more in your recipe. For example, if the recipe calls for 2 teaspoons pumpkin pie spice, you could use 2 1/2 teaspoons if your spices aren’t fresh.
If I am in a hurry, I use this for just about any recipe calling for a blend of (most of) the spices below. Your gingerbread recipe calls for cinnamon, ginger, nutmeg, etc? Just add up the total amount of spices and use your pumpkin pie spice blend. I’ve always thought that AirBnbs should have salt, pepper, pumpkin pie spice and an Italian spice blend and a traveler could make just about anything!
Ingredients
2 tablespoons ground cinnamon
1 tablespoon ground ginger
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/4 teaspoon ground cardamom
1/4 teaspoon ground mace
pinch ground black or white pepper (optional…this gives it a bit of a zing)
