A lemon-flavored cookie from France that is baked in a traditional shell-shaped Madeleine mold.* These cookies have almost the texture of a dense muffin, but with crispy edges. Magnifique!
Ingredients
2 lemons
5 large eggs
1 cup superfine (caster) sugar
2 cups all-purpose flour
2 teaspoons baking powder
1 pinch of salt
1 cup melted butter
powdered sugar (optional)
Directions
- Preheat the oven to 450F. Butter 2 or 3 madeleine trays. Sprinkle with flour and shake out any excess.
- Finely grate the rind from the lemons.
- Beat the eggs, with the sugar, then stir in the flour. Add the baking powder, a pinch of salt, and the lemon rind and mix well. Add the butter and stir until well blended.
- Fill each madeleine mold with the batter and leave to stand for 10 minutes. Bake for 10 minutes.
- Remove the trays from the oven and unmold the madeleines immediately.
- Before serving, you may sprinkle them with powdered sugar.

- * Madeleine molds are inexpensive and easy to find. You should be able to find one in your local kitchen specialty store (please buy local), but if not, they can be easily found at Amazon, and for collectors, there are often vintage madeleine molds available on Etsy.
