Course: Cutout CookiesDifficulty: Medium

Raisin-caraway cutout cookies with the flavor of Irish soda bread.

  • 2 cups all-purpose flour

  • 3/4 cup sugar

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 teaspoon caraway seeds

  • 1/2 cup butter or margarine

  • 1/2 cup currants

  • 1 egg

  • 1/4 cup buttermilk

  • Preheat oven to 350 F. Combine dry ingredients in a mixing bowl. With a pastry blender or two knives, cut in butter until mixture resembles coarse meal. Stir in currants, then beaten egg. Add buttermilk and mix with a fork to make a soft dough. On a floured surface, shape dough into a ball and knead lightly 5 or 6 times. Roll out dough to 1/4 inch thick and cut into 2″ squares or circles with a knife or cookie cutters. Bake 12-14 minutes or until slightly browned.

I’m planning the St. Patrick’s Day party for my daughter’s class. I can’t wait to make these..they will be a hit with the kids! I found some cello candy bags from Box and Wrap that have shamrocks on the bags….so cute. It’s the extra special touches that make the party great. Thanks so much for the recipe.
