Raisin-caraway cutout cookies with the flavor of Irish soda bread.
Ingredients
2 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon caraway seeds
1/2 cup butter or margarine
1/2 cup currants
1 egg
1/4 cup buttermilk
Directions
- Preheat oven to 350 F. Combine dry ingredients in a mixing bowl. With a pastry blender or two knives, cut in butter until mixture resembles coarse meal. Stir in currants, then beaten egg. Add buttermilk and mix with a fork to make a soft dough. On a floured surface, shape dough into a ball and knead lightly 5 or 6 times. Roll out dough to 1/4 inch thick and cut into 2″ squares or circles with a knife or cookie cutters. Bake 12-14 minutes or until slightly browned.
