Course: Cutout Cookies, Rolled CookiesDifficulty: Medium

This is a nice sugar cookie which doesn’t require that you chill the dough before you roll it out. We recommend you roll it out between two sheets of waxed paper to prevent sticking.

  • 1 cup butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 2 teaspoons baking powder

  • 3 cups all-purpose flour

  • frosting, icing or glaze, to decorate (optional)

  • Preheat oven to 375°F. In a large bowl, cream butter and sugar with an electric mixer. Beat in eggs and vanilla. Add baking powder and flour one cup at a time, mixing after each addition. Dough will be stiff. Do not chill dough. Divide dough in half. Roll each half about 1/8 inch thick, between two sheets of waxed paper sprinkled with flour. Dip cutters into flour before each use. Bake cookies on ungreased cookie sheet on middle rack of oven for 8-12 minutes, or until cookies edges of cookies are lightly browned.
  • If desired, when cool, decorate with one of our frosting, icing, or glaze recipes, or decorate with purchased decorators frosting.

These cookies were super easy to work with. The dough was a little difficult to mix at first but once I took some time to work it with my hand it mixed beautifully and worked really well. I get frustrated with dough that has to be chilled sometimes since it warms up as you roll it and cut it and I don’t always have time to stop and re-chill it before continuing. This dough didn’t have any of those issues and I was able to keep rolling it out and cutting it with no problems. It was a really good tasting sugar cookie as well. I took a lot of them to work and got lots of compliments on them!

This has been my go-to cookie recipe for YEARS. I roll it out between two pieces of wax or parchment paper and have no problem with it sticking. Everyone's favorite!

I've made cookies twice now with this recipe. The second time didn't work out so well, but it was probably just because my flour is a bit old. I just added some melted butter because it was too crumbly but they turned out amazing.
