If I’m being honest, this isn’t quite the American flag, but it is Red, White, and Blue! Of course, you can do many flags with this cookie, depending on colors and placement. If you are shooting for American patriotic, make sure that you present them so that they appear in the order of red, white and blue (red on the left), because if you turn them upside-down, in blue, white and red (blue on the left), they are the French flag (perfect for July 14th, but not the 4th). 🙂 Italians and Mexicans, you just need green. The Irish can do green and orange. And so on!
Ingredients
1 cup margarine, softened
1 egg white, lightly whipped
2 teaspoons pure vanilla extract
2-1/2 cups unbleached all-purpose flour
1-1/2 cups granulated sugar
1-1/2 teaspoons baking powder
1 teaspoon red food coloring
1 teaspoon blue food coloring
(or other food coloring depending on the flag you are trying to reproduce)
Directions
- In a mixing bowl, combine margarine, egg white, and vanilla extract.
- In another mixing bowl, combine flour, sugar, and baking powder.
- Mix wet ingredients with dry ingredients just until moistened.
- Divide dough into 3 equal portions. Tint 1 portion with red food coloring and another portion with blue food coloring. Mix thoroughly to get a uniform color. Un-tinted dough represents white. Of course, you can change any colors to represent other flags.
- Form each portion into bars of equal length and about 1 inch thick. Wrap each bar in waxed paper or plastic wrap. Refrigerate until easy to handle. Remove waxed paper and stack bars on top of each other in the desired color arrangement.
- Wrap entire bars in waxed paper again and chill until firm.
- Preheat oven to 350 F and line baking sheets with parchment paper. Cut bars into 1/4-inch-thick slices. Place on baking sheet. Bake for 12-15 minutes or until set. Allow to cool for about 5 minutes, then remove to a wire rack to cool completely.
- Italian or Mexican flag option
