Flourless cookies pack a real peanut-buttery punch.

Ingredients

  • 1 cup peanut butter

  • 1 cup sugar

  • 1 large egg, slightly beaten

  • 1 teaspoon baking soda

Directions

  • Preheat oven to 350 degrees and grease baking sheets. In a mixing bowl, beat peanut butter and sugar until blended. Beat in egg and baking soda. Roll level teaspoons of dough into balls and arrange about 1 inch apart on prepared cookie sheet. Flatten balls to about 1-1/2 inch diameter with a fork dipped in flour making a criss-cross pattern. Bake until puffed and golden, about 10 minutes. Cool cookies on baking sheet for about 2 minutes and remove to racks.

Love this recipe. I make about 12 from this recipe measuring using an ice cream scoop. I cook 4 to 6 at a time on a baking sheet. I use silicone paper and after two mins I slide the cookies on the paper onto a cooling rack. They harden as they cool. For goodness sake don't remove the biscuit while still hot from the tray or it will fall to pieces. WAIT for it to cool, or as I do, use hardworking or silicone paper.

Great :) Made this with my 8 year old cousin and he LOVED it <3 It's a quick, easy, and fun way to make cookies with little ones. :) I skipped out on the baking soda, and instead of regular sugar I used brown sugar :) it's WAY better that way. Hope this is helpful <3
