Course: Hand-Shaped CookiesDifficulty: Medium

Delicately flavored crispy cookies decorated with a cookie stamp.

  • 1-3/4 cup all-purpose flour

  • 1/2 teaspoon ground cardamom

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 1/2 cup butter or margarine

  • 3/4 cup packed brown sugar

  • 1 large egg

  • 1/2 teaspoon vanilla

  • Stir together flour, cardamom, cinnamon and salt. In a small mixer bowl beat butter or margarine till softened. Add brown sugar and beat until fluffy. Add egg and vanilla and beat well. Stir in flour mixture till well mixed. Cover and chill about 2 hours or till easy to handle. Preheat oven to 350F. Shape into 3/4-inch balls. Place 2 inches apart on a greased cookie sheet. Flatten firmly with a floured cookie stamp or the floured bottom of a glass that has a design in it. Bake about 8 minutes or till lightly golden. Remove and cool on wire racks.

not much flavor to these, I would try upping the cardomom to 1 tsp. and possibly the cinnamon as well. I also found that it only made half as many as stated. I will make these again as with a bit of tweaking, I'm sure they'll be fab.

I stamped these using my "God Jul" cookie stamp for our fair and Saint Lucia festival at church. They were a big hit! Very flavorful!
