Ingredients

  • 2-1/4 cups all-purpose flour

  • 3/4 cup cocoa powder

  • 1 teaspoon baking soda

  • 1 cup granulated sugar

  • 1 cup brown sugar

  • 1 cup butter, at room temperature

  • 2 teaspoons vanilla extract

  • 2 large eggs

  • 36 Rolo candies

  • 1 cup chopped nuts of choice (optional)

  • 1 tablespoon granulated sugar

Directions

  • Preheat oven to 350F and line baking sheets with parchment paper. Beat sugars and butter until light and fluffy. Add eggs and vanilla, beat well. Add flour and baking soda, blend well, chill dough in refrigerator for at least 3 hours. Roll 1 tablespoon of dough in palm of hand to form a ball. Press Rolo into ball, covering it completely. Press one side into mixture of 1 cup chopped nuts mixed with 1 tablespoon sugar. Place cookies, nut side up, on prepared baking sheets. Bake for 9 minutes. Allow to cool for one minute on baking sheet then remove to wire racks to cool completely.

Yes, I would definitely make this recipe again! Definitely add the 3/4 cup of cocoa to the dry mixture - no need to flatten the cookies - just make sure they are far enough apart (I was able to make 10 on a standard cookie sheet without them running into each other). My husband loves Rolos, and he found the recipe - I made them and they were FANTASTIC - I don't even like caramel all that much but they were so good! I didn't use the nuts because my husband and sons aren't big fans of nutty cookies, but I may make a few with almonds for myself next time - yummy :-)
