Ingredients
2-1/4 cups all-purpose flour
3/4 cup cocoa powder
1 teaspoon baking soda
1 cup granulated sugar
1 cup brown sugar
1 cup butter, at room temperature
2 teaspoons vanilla extract
2 large eggs
36 Rolo candies
1 cup chopped nuts of choice (optional)
1 tablespoon granulated sugar
Directions
- Preheat oven to 350F and line baking sheets with parchment paper. Beat sugars and butter until light and fluffy. Add eggs and vanilla, beat well. Add flour and baking soda, blend well, chill dough in refrigerator for at least 3 hours. Roll 1 tablespoon of dough in palm of hand to form a ball. Press Rolo into ball, covering it completely. Press one side into mixture of 1 cup chopped nuts mixed with 1 tablespoon sugar. Place cookies, nut side up, on prepared baking sheets. Bake for 9 minutes. Allow to cool for one minute on baking sheet then remove to wire racks to cool completely.
