A healthy oatmeal cookie redolent of pumpkin spices and the sweet zing of cranberries. A fall favorite!


  • 1/3 cup coconut oil, melted

  • 1/2 cup packed brown sugar

  • 1 teaspoon vanilla extract

  • 1 large egg

  • 3/4 cup pumpkin puree

  • 1 cup whole-wheat pastry flour

  • 2 teaspoons pumpkin pie spice

  • 1 teaspoon cinnamon

  • 3/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup old-fashioned rolled oats

  • 1/2 cup dried cranberries


  • Preheat oven to 375F. Line a baking sheet with parchment paper.
  • In a large bowl, beat coconut oil, brown sugar, vanilla, and egg until creamy. Stir in pumpkin purée until just combined.
  • In a separate bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda and salt. Add the dry ingredients to the wet, mixing until just combined. Fold in the oats and cranberries.
  • Drop onto the prepared baking sheet with a large cookie scoop. Bake for 10-12 minutes.
