A healthy oatmeal cookie redolent of pumpkin spices and the sweet zing of cranberries. A fall favorite!
Ingredients
1/3 cup coconut oil, melted
1/2 cup packed brown sugar
1 teaspoon vanilla extract
1 large egg
3/4 cup pumpkin puree
1 cup whole-wheat pastry flour
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup old-fashioned rolled oats
1/2 cup dried cranberries
Directions
- Preheat oven to 375F. Line a baking sheet with parchment paper.
- In a large bowl, beat coconut oil, brown sugar, vanilla, and egg until creamy. Stir in pumpkin purée until just combined.
- In a separate bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda and salt. Add the dry ingredients to the wet, mixing until just combined. Fold in the oats and cranberries.
- Drop onto the prepared baking sheet with a large cookie scoop. Bake for 10-12 minutes.
