A delicate lemon spritz cookie with a lemon icing.

Ingredients

  • For the cookies:
  • 1 cup butter

  • 1/2 cup powdered sugar

  • 2 cups all-purpose flour

  • 1 teaspoon lemon zest

  • 1/2 teaspoon salt

  • For the icing:
  • 1 large egg, beaten

  • 2/3 cup white sugar

  • teaspoons lemon zest

  • 3 tablespoons lemon juice

  • tablespoons butter

  • colored sprinkles (optional)

Directions

  • Preheat oven to 400 F. In a medium bowl, beat together butter and confectioners’ sugar until light and fluffy. Stir in the lemon peel, flour and salt until well combined. Beat in as much flour as you can. Stir in any remaining flour with a wooden spoon. Do not chill dough. Pack dough into a cookie press. Force dough through press onto ungreased baking sheets. Bake for 5 to 8 minutes or until light brown. Allow to cool on baking sheets for 1 minute and then remove to wire rack to cool.
  • Combine the beaten egg, sugar, lemon zest, lemon juice and butter in the top of a double boiler. Stir until thick. Drizzle over cooled cookies. If desired, use colored sprinkles while the icing is still wet.

My mother absolutely adores these! I use a slightly different icing, made of just lemon juice and confectioner's sugar, and brush it over the top for an extra tangy glaze. My niece demanded that I do a similar version with cherry extract and maraschino liquid for the glaze, and it works equally well. These have become a fast favorite for piano recitals, teas, and even elementary school parties!
