These Easter eggs are like home-made peanut butter cups. If you want, you can decorate them for Easter! Or, shape them into Christmas trees instead.
Ingredients
1/2 pound butter, softened
2-1/2 cups peanut butter
1-1/2 pounds powdered sugar
1-1/2 pound semi-sweet chocolate
assorted candy melt colors for decorating (pictured, optional)
Directions
- In a large bowl, cream together the butter and peanut butter. Gradually add powdered sugar, until it forms a stiff dough. Shape into small eggs and place on a cookie sheet lined with foil or waxed paper. Refrigerate until firm. Melt the chocolate in the top of a double boiler over hot water. With a fork, dip each egg in the melted chocolate. Return dipped eggs to the lined cookie sheet. Refrigerate until chocolate sets. If desired, decorate with various colors of melted candy melts.
Yield will depend entirely on how big you make your eggs! This makes a lot…you can halve the recipe.
