Chocolatey bars with spices, almonds and dried fruits, topped with a rum-flavored chocolate frosting.
Ingredients
- For the bars:
1/2 cup butter, at room temperature
1 1/4 cups packed brown sugar
1 large egg
1 teaspoon vanilla extract
1-1/2 cups sifted all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup chopped mixed candied fruit
1/4 cup finely chopped blanched almonds
2 ounces unsweetened chocolate, grated
- For the frosting:
2 tablespoons butter, at room temperature
2 ounces unsweetened chocolate, melted
1/8 teaspoon salt
1 teaspoon vanilla
2 cups confectioners’ sugar
1/4 cup light rum
Directions
- Pre-heat oven to 350 F and grease a 9″ x 9″ baking pan. In a large mixing bowl, beat together butter and sugar until light and fluffy. Stir in vanilla. In another bowl, sift together flour, spices, baking powder and salt. Stir the dry ingredients into the butter mixture. Stir in fruit, almonds and chocolate. Pat into the bottom of prepared pan. Bake for 25 minutes. Meanwhile, prepare frosting by blending all of the frosting ingredients until smooth. When bars are cool, spread with frosting and cut into bars.
