These are sooo good! They have a light crispness and yet are a bit chewy. I increased the almond extract to 1/2 tsp & was glad I did.

these are such a hit with friends and family! I have made the recipe at least 4 times in the past 3 months and they always get raves. Better texture the first 2-3 days.

I was unable to find a 15-1/2-inch by 10- 1/2-inch baking pan so I made them with a regular 9" x 13" baking pan and they came out FINE. At first I was a little disappointed in the cookies as I found they were bland, but allowing them to mellow for a couple days really brought out the almond flavor. These are not something to eat right out of the oven as the delicate almond flavor will be totally lost. Give them a day or two and they really develop a nice flavor.
