  • 1 cup butter, softened

  • 1 cup granulated sugar

  • 1 large egg yolk

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon almond extract

  • 1/8 teaspoon salt

  • 2 cups all-purpose flour

  • 2 large egg whites

  • 2 tablespoons granulated sugar

  • 1/4 teaspoon ground cinnamon

  • 1/2 cup finely chopped almonds


  • Preheat oven to 350 F. Beat together butter and 1 cup sugar until light and fluffy. Stir in egg yolk, vanilla, almond extract and salt. Stir in flour and mix well. Pat into a 15-1/2-inch by 10- 1/2-inch baking pan. Beat egg white till stiff, then beat in 2 tablespoons sugar and cinnamon. Fold in almonds and spread over base. Bake for 25 to 30 minutes. Remove from oven and let cool 10 minutes. Cut into bars while still warm.

These are sooo good! They have a light crispness and yet are a bit chewy. I increased the almond extract to 1/2 tsp & was glad I did.

I was unable to find a 15-1/2-inch by 10- 1/2-inch baking pan so I made them with a regular 9" x 13" baking pan and they came out FINE. At first I was a little disappointed in the cookies as I found they were bland, but allowing them to mellow for a couple days really brought out the almond flavor. These are not something to eat right out of the oven as the delicate almond flavor will be totally lost. Give them a day or two and they really develop a nice flavor.
