Traditional cookies from Amish Country.
Makes about 483/4 cup butter, softened
1 cup granulated sugar
1 egg
1/4 cup unsulfured molasses
2-1/2 cups all-purpose flour
1 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1-1/2 teaspoon baking soda
extra granulated sugar
Preheat oven to 350 F. In a mixing bowl, beat together butter and 1 cup sugar until creamy. Add egg and molasses; beat until combined. Add the remaining ingredients and mix until well combined. Roll dough into 1-inch balls and roll in the extra granulated sugar. Place balls on ungreased baking sheet. Bake for 5 - 7 minutes until barely turning brown. Allow to cool for 1 minute on baking sheet and then remove to wire racks to cool completely.

Would make this again.
I have actually never liked ginger cookies but I make Christmas cookies to give away and make it a point to try everything. This is the best ginger cookies I have ever eaten. I will happily make them again.

This was fantastic! I took the advice to use 2 eggs instead of one. I brought these to work and everyone wanted to recipe. Will make a double batch next time as they go fast!

Would make this again.
I never made ginger cookies before and these turned out wonderful. I used bread flour instead of all-purpose and they were very moist. I also cooked them for 10 minutes in a convection oven.
