Yes you read that right! A vintage recipe with mashed potatoes and peanut butter. Surprisingly good!

Ingredients

  • 1/4 cup cooked white potatoes

  • 1 pound confectioners sugar (about 3 cups)

  • 1 teaspoon vanilla

  • peanut butter

Directions

  • Mash potaoes, add vanilla, and approximately 1 pound of confectioners sugar until soft dough is formed. Divide dough in fourths. Roll between wax paper until 1/8 inch thick. Spread thin layer of peanut butter on each layer. Roll up like jelly roll. Refrigerate overnight. Cut into pieces and serve – may sprinkle with confectioners sugar if desired.

I haven't had potato candy in 45 year's. My family are all in Tennessee and as a child my Grandma, Aunt, and Cousin would make this candy whenever we went to visit. It didn't have to be Christmas time. I love this candy and was so happy when I came across this recipe. It holds so many fond memories for me. I can't wait to make this for my family. I know they are going to love this candy. The picture looks just like I remember it. I would help make it but over the year's lost the recipe. Thank you for sharing this recipe.

I cannot believe I just saw this recipe. My Grandmother made it every Christmas and gave it to my family in a special round tin every year. I waited every Christmas for that tin to come. I was taught to make this candy as a child nearly 50 years ago. My grandmother told me the story as she was teaching me that this was a very popular depression era candy. As a child this was the only candy she was able to get as it was very inexpensive to make and it kept a lot of the depression children happy :)

I just had to try this finally. My kids LOVED it! When I put the first 2 cups of powdered sugar in with the potatoes I was very dubious. First I thought it would be way too dry as there is no liquid. NOPE! Within a few seconds the whole thing became very, very wet. I was dubious again that only 1 more cup of powdered sugar was going to bring it to "dough" consistency. But it did, just fine. All in all, it was a very easy recipe to put together.
