A colorful cookie with a fresh, fruity taste of any jello flavor you like!
Ingredients
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1-1/2 cup salted butter (softened)
1 cup granulated sugar
1 large egg
1 teaspoon vanilla
4 (3-ounce or 84-gram) packages Jell-o (any flavor, NOT sugar-free)*
food coloring (optional)
Directions
- Pre-heat oven to 350F and line baking sheets with parchment paper or silicone baking mats. Beat butter in large bowl with mixer until creamy. Add sugar and beat until light and fluffy. Blend in egg and vanilla. Mix flour and baking powder in a separate bowl. Gradually beat in flour mixture. Divide dough into 4 sections. Sprinkle 2 tablespoons of jello onto each section. Knead together with dough. You may want to add a few drops of food coloring to make the dough more vibrant. Shape dough into 1-inch balls. Roll in the extra jello from the packets. Place 2 inches apart, on prepared baking sheets. Flatten with the bottom of a bowl or by making criss-crosses with a fork. Bake 8 to 10 minutes. Cool on baking sheets 2 minutes, then remove to wire racks and cool completely.
Notes
- * For the most flavor and color, buy 4 different flavors of Jell-o for this. Generic or other brands of flavored gelatin are fine, as long as they are not sugar-free and the packages are 3 ounces (84 grams).
