A snowball/teacake type cookie with a whole nut in the center and rolled in coconut.


  • 1 cup butter, at room temperature

  • 1/2 cup granulated sugar

  • 2 teaspoons vanilla extract

  • 1/4 teaspoon salt

  • 2 cups sifted all-purpose flour (sift first, then measure)

  • 1/2 pound pecan halves, or whole almonds

  • shredded coconut


  • Pre-heat oven to 325 F. Beat together butter, sugar and vanilla until fluffy. Sift flour with salt and add to butter mixture; blend. Shape dough around each nut to form a 1-inch diameter ball. Roll in coconut. Place on an ungreased cookie sheet. Bake for 20 minutes. Cool and store in loosely covered can.

Delicious, a bit mushy, but a great recipe. I'd definitely make this again. I love coconut. WOuldn't be so great if I didn't. I know many who don't like it cuz its coconut. But delicious for me. I couldn't stop eating them!!!

I made the recipe exactly the same as above but add 1 tblspoon of imitation Rum and they were delicious. I also put them in the freezer for a bit before serving them which made them not as mushy. They were a hit!
