A new twist on the chocolate chip cookie…with chocolate covered raisins. This is a “gift in a jar” recipe where you layer the ingredients inside a jar to give as a gift. Provided instructions allow the recipient to bake the cookies at home. Of course, you can just make the cookies without the jar!

Ingredients

  • 1-3/4 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup packed brown sugar

  • 3/4 cup granulated sugar

  • 1 cup chocolate covered raisins

  • 1/2 cup milk chocolate chips or chopped nuts (pictured) (or enough to fill the jar)

Directions

  • Mix together the flour, baking powder, baking soda and salt, and spoon into the the bottom of a 1-quart or 1-litre canning jar. Carefully bang jar on countertop to pack down the flour layer. Layer the rest of the ingredients in order given in the jar. Add enough milk chocolate chips or chopped nuts to fill to the top of the jar (a litre is a bit bigger than a quart, so if you’re using litre-sized jar you may need just a little bit more).
  • Attach the following instructions to the jar:
    Chocolate Covered Raisin Cookies
    Empty cookie mix into large mixing bowl. Use your hands to thoroughly blend mix. Add 1/2 cup butter or margarine, softened at room temperature. Add 1 egg, slightly beaten, and 1 teaspoon vanilla. Mix until completely blended. You may need to finish mixing with your hands. Shape into walnut-sized balls. Place 2 inches apart on a parchment-lined cookie sheet. Bake at 375F (190C) 10 to 14 minutes or until edges are very lightly browned. Cool 5 minutes on baking sheet. Remove cookies to racks to finish cooling.

I made these two days ago and they are still nice and chewy. This would be a great recipe for any chocolate chip cookie, but the chocolate covered raisins are surprisingly delicious in a cookie!

My friends and family who have had these cookies say it's the best they've ever had. I do not use the parchment paper, only non-stick spray on an airbaked tray. The key (as with any cookie) is to not overcook and check them before the timer goes off. Highly recommend this recipe.

I first baked these on parchment on a non stick baking sheet and they burned after 10 min. Then I tried parchment on an airbaked, and then just rolled them directly on the non stick pan. Both batches were flat and boring to the taste. I would not make these again.
