A moist pumpkin cookie sandwiched with a sweet cream cheese frosting filling. The cookie is full of pumpkin spices and the cream cheese is the perfect compliment to these. Very easy to whip up and sure to please all the pumpkin spice lovers out there!
Ingredients
- For the cookies
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
3 tablespoons unsalted butter, softened
1/3 cup brown sugar, packed
1/4 cup granulated sugar
1/2 cup pumpkin puree
1/2 teaspoon vanilla extract
1 large egg
- For the filling
2/3 cup cream cheese, softened
1/4 cup heavy cream
1/4 cup confectioners’ sugar
Directions
- Make the cookies
- Heat oven to 375F and line baking sheets with parchment paper. In a medium mixing bowl, combine the flour, baking powder, baking soda, pumpkin pie spice, and salt. In a second mixing bowl, beat together the butter and sugars until creamy. Beat in the pumpkin, vanilla, and egg. Stir the flour mixture into the pumpkin mixture; just until fully combined. With a 2-tablespoon cookie scoop (or heaping tablespoons), drop cookies onto prepared baking sheets leaving 2 inches of space between cookies. Bake until puffed and cooked thoroughly, about 10-12 minutes. Allow to cool for a couple minutes and then remove to wire racks to cool completely.
- Make the filling and assemble cookies
- While cookies are cooling, make the filling by whipping all the filling ingredients together until smooth. When the cookies are completely cooled, assemble sandwiches. Store in the refrigerator.
