This is more like a chocolate chip cookie dough, with mincemeat instead of chocolate chips. The surprise is that the mincemeat cookies look like chocolate chip cookies so people are often surprised when they taste the cookies. The raisins, apples and spices in the mincemeat make this a moist and flavorful cookie.

Ingredients

  • 3 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 cup (2 sticks) softened butter or margarine

  • 3/4 cup granulated white sugar

  • 3/4 cup packed dark brown sugar

  • 1 teaspoon vanilla extract

  • 2 large eggs

  • 1 (9-ounce) package Nonesuch Condensed Mincemeat

Directions

  • Preheat oven to 375 F. Combine flour, baking soda & salt in a small bowl. Beat butter, sugar & vanilla in a large bowl. Add eggs, beating well. Gradually blend in flour mixture. Crumble mincemeat and stir into dough. Drop by rounded teaspoon onto ungreased cookie sheet. Bake 9 to 11 minutes until golden brown.

My stepmom made these all the time,especially during the holidays. When I was in college,they never made into the dorm if roommates knew I was coming back with mom's cookies! Her secret? She added chocolate chips! Insanely delicious...You have to try it!

I've been making mincemeat cookies for several years now and each year I try a different recipe. No more. This one is far and away the best and I'll be using it from now on. The cookies are delicious. The only change I made was to add 1/2 teaspoon of cinnamon and a sprinkling of nutmeg.
