This is more like a chocolate chip cookie dough, with mincemeat instead of chocolate chips. The surprise is that the mincemeat cookies look like chocolate chip cookies so people are often surprised when they taste the cookies. The raisins, apples and spices in the mincemeat make this a moist and flavorful cookie.
Ingredients
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) softened butter or margarine
3/4 cup granulated white sugar
3/4 cup packed dark brown sugar
1 teaspoon vanilla extract
2 large eggs
1 (9-ounce) package Nonesuch Condensed Mincemeat
Directions
- Preheat oven to 375 F. Combine flour, baking soda & salt in a small bowl. Beat butter, sugar & vanilla in a large bowl. Add eggs, beating well. Gradually blend in flour mixture. Crumble mincemeat and stir into dough. Drop by rounded teaspoon onto ungreased cookie sheet. Bake 9 to 11 minutes until golden brown.
