Course: Breads and RollsDifficulty: Easy

A rich gourmet twist on your traditional zucchini bread. Dark, chocolatey goodness!

  • 2 cups shredded zucchini

  • 2 ounces unsweetened chocolate, melted

  • 3 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon cinnamon

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 3 large eggs

  • 2 cups granulated sugar

  • 1 cup vegetable oil

  • 1 teaspoon vanilla

  • 1 cup chopped nuts, and/or raisins, and/or chocolate chips

  • Pre-heat oven to 350F. Combine dry ingredients in large bowl. In separate bowl, beat eggs well. Add sugar, continue beating. Add oil and vanilla, mix well. Mix in melted chocolate. Pour liquid mixture over dry ingredients, stir. Add nuts/raisins/chips. Fold in zucchini. Divide batter between 2 greased and floured loaf pans. Bake for 1 hour and 20 min, or until a toothpick inserted into the center comes out clean. Freezes really well, assuming that both loaves aren’t eaten in a matter of hours!

this was my mom's recipe (Audrey), and it is truly to die for...she must have made it several times each summer for at least 20 years...it's an awesome way to use up those gigantic "oops I didn't see it there" zukes that magically appear in the garden.

It was the best - the chocolate in the recipe made it great. Thank you...

This is an amazing recipe! Very moist and exceedingly chocolaty. Definitely a keeper. I'll never make plain zucchini bread again as long as I live.
