A bar cookie resembling a pecan pie. Cake mix simplifies the creation of the crust and chocolate adds another layer of flavor.

Ingredients

  • 1 (18-1/4 ounce box) chocolate or yellow cake mix (set aside 1 cup of cake mix from package)

  • 1/4 cup butter, softened

  • 1 large egg, slightly beaten

  • 3 large eggs

  • 3/4 cup packed brown sugar

  • 3/4 cup dark corn syrup

  • 1 teaspoon vanilla extract

  • 1-1/4 cups coarsely chopped pecans

Directions

  • Preheat oven to 350°F. Lightly grease a 9×13-inch baking pan; set aside. Set aside the 1 cup of the cake mix for the filling. For the crust, in a large mixing bowl combine the remaining cake mix, butter, and the one slightly beaten egg. Stir with a fork until crumbly. Turn into prepared pan. With lightly floured hands, press evenly onto the bottom to form a crust. Bake for 12 minutes.

Meanwhile, for the filling, in a medium bowl combine the three additional eggs, brown sugar, corn syrup and vanilla. Add the reserved 1 cup of cake mix; stir with a fork just until blended. Some tiny cake clumps will remain. Spread filling evenly over baked crust; sprinkle with pecans. Bake for 25 – 30 minutes or until filling appears set when pan is gently shaken. Cool completely on wire rack. Cut into 2-inch bars. Cover and chill to store.

Awesome bars! I'm not a baker - these were very easy to make and were absolutely delicious. Perfect for a holiday treat.

I had high expectations for this recipe and was anxious to try it as part of my annual Christmas baking with a friend. However, it tasted simply like a brownie mix topped with pecans.

These were delicious! My husband loves pecan pie, and I thought what a great alternative for our traditional Christmas cookies. I added two teaspoons of bourbon, and drizzled dark chocolate over the top. My husband loved the bourbon addition!

My Husband flipped when he ate this. We love pecan pie and this is something different and easy to make. I also added more pecans than the recipe calls for. I will make this again & again & again...

This was one of the worst recipes I've ever made. The pecans sank to the bottom, it was a gooey mess that didn't even taste good. What a waste of ingrediants.

WOW! These bars were a HUGE hit at Thanksgiving this year! I decided to make the bars instead of traditional pecan pie and my guests were glad I did! Try 'em once and you'll be hooked! They are VERY easy to make too!

These were absolutely great! I also took the advise of the above reviews and added extra pecans. I two concurrent batches, one with chocolate cake and one with butter pecan cake, but then swapped the fillings. So the one with the chocolate base had butter pecan filling and vice versa - absolutely amazing!!!!

I'm a personal chef and caterer. I was looking for an easy alternative to having to make the crust from scratch, as my client requested pecan pie squares for 40 people ( along with several other appetizers, entrees and another dessert). I got rave reviews on all the food, and they especially loved these bars. I used yellow cake mix.

Great recipe. I found a butter pecan cake mix at the store and used that instead of the chocolate. Yum!
