A peanut butter bar with chocolate chips and a chocolate topping.

Ingredients

  • 1 cup creamy peanut butter

  • 6 tablespoons butter, softened

  • 1-1/4 cups sugar

  • 3 large eggs

  • 1 teaspoons vanilla extract

  • 1 cup flour

  • 1/4 teaspoon salt

  • 2 cups chocolate chips, divided

Directions

  • Preheat oven to 350° F. In large mixing bowl, beat peanut butter and butter until smooth, about 1 minute. Add sugar, eggs and vanilla, and beat until creamy. Blend in flour and salt. Stir in 1 cup of the chocolate chips. Spread into ungreased 13×9 inch baking pan. Bake about 22 minutes, or until edges begin to brown. Immediately sprinkle remaining chocolate chips over cookie layer. Let stand 5 minutes until chips become shiny and soft, spread the melted chocolate evenly over top. Cool completely at room temperature so that the chocolate doesn’t “bloom”. Cut into bars when the chocolate is firming up, but not completely hard.

Notes

  • Our photo shows some Christmas sprinkles on the top. You can add those too!

I made some minor adjustments, which worked great! I used crunchy peanut butter (it was all I had), doubled the vanilla (love the flavor), and left out the chocolate chips (was out of them). I baked it in a 13"x9" pan for 20 minutes. Let it cool completely then frosted it with chocolate frosting. Cut into bars and served! They were excellent! Will make them many more times!

I will be making them again for sure. They will not last very long in this kitchen!! I liked how fast and easy they were to make!! They are a 5 star bar for sure!!

I made this for a bake sale, but had to sample them. Very yummy. I thought they were a cross between a peanut butter cup and cookie. I altered it slightly, I used a mixture of peanut butter chips and chocolate chips and added Reece's pieces to the top to add some color. Will make again!
