A bar cookie with an oatmeal base and chocolate, caramel and nut filling, and oat topping.


  • 1 package (14 ounce) soft caramel candies, unwrapped

  • 1/3 cup milk

  • 2 cups unbleached flour

  • 2 cups quick-cooking or regular oats

  • 1-1/2 cups packed brown sugar

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 large egg

  • 1 cup margarine or butter, softened

  • 1 package (6 ounce) semisweet chocolate chips

  • 1 cup chopped walnuts or dry roasted peanuts


  • Pre-heat oven to 350° F. Grease a 13 x 9 x 2-inch baking pan. Heat candies and milk in 2-quart saucepan over low heat, stirring frequently, until smooth; remove from heat and set aside. In a large bowl, mix flour, oats, brown sugar, baking soda, salt and egg. Stir in margarine with fork until mixture is crumbly. Press half of the crumbly mixture in pan. Bake 10 minutes. Sprinkle with chocolate chips and walnuts; drizzle with caramel mixture. Sprinkle remaining crumbly mixture over top. Bake until golden brown, 20 to 25 minutes. Cool 30 minutes. Loosen edges from sides of pan; cool completely. Cut into 2 x 1-inch bars.

My mother got this exact same recipe off the back of a box of Quaker Oats back in the 1960's. Loved them then, still love them. They are always a big hit with the kids and grandkids and adults.
