A lovely maple-orange cranberry sauce with a hint of cinnamon and a bit of crunch.
Ingredients
1 (12-ounce) package fresh or frozen cranberries
1 teaspoon grated orange zest
1/2 cup water
1/2 cup pure maple syrup, grade B if possible
1/2 cup granulated sugar
1/4 teaspoon ground cinnamon
1/2 cup freshly-squeezed orange juice
1 cup coarsely chopped walnuts (optional)
Directions
- In a large saucepan, combine berries, water, maple syrup, sugar, cinnamon, orange juice and zest. Bring to boil, stirring frequently, and reduce to medium heat to cook berries about 10-12 minutes, stirring occasionally, until most have popped open. Remove from heat and stir in the walnuts, if using. Refrigerate several hours before serving. It will set once thoroughly chilled.
