Double-Quick Pumpkin Bars

Makes about 36

For the bars:
1 cup vegetable oil
4 large eggs
2 cups granulated sugar
2 cups canned pumpkin
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoon baking powder
2 teaspoon ground cinnamon
2 cups all-purpose flour

For the frosting:
3 ounces cream cheese, softened
6 tablespoons margarine, softened
1 teaspoon milk
1 teaspoon vanilla extract
2 cups powdered sugar

Preheat oven to 350F. In a large mixing bowl, beat together oil, eggs and sugar until mixture is creamy. Add remaining bar ingredients and mix well. Pour batter into an ungreased 15 x 10-inch jelly roll pan. Bake 20 to 25 minutes. Cool completely and frost with cream cheese frosting.

To make frosting, beat together all the frosting ingredients until creamy. Spread on cooled, uncut cookies. After frosting has set, cut into equal size bars.

Store any leftover bars, covered, in the refrigerator.

Would make this again.
we love pumpkin and these were fine. But, I always add more spice than called for, as we like ours very spicy...Esther four stars
