Combine sugar and shortening in large bowl and beat at medium speed of electric mixer until well blended. Add eggs, syrup, vanilla, lime juice and zest. Beat until well blended and fluffy. Combine flour, baking powder, soda and salt. Add gradually to creamed mixture at low speed and mix until well blended. Stir in coconut. Wrap dough in plastic wrap and refrigerate at least 1 hour.
Pre-heat oven to 375 F. Shape dough into 1-inch balls. Place 2 inches apart on ungreased baking sheet. Bake for 5 to 7 minutes. Don't overbake. Cool 2 minutes on baking sheet and then remove to sheets of foil laid out on the countertop. Dust with powdered sugar and cool completely.

Would make this again.
I made these last year and they were voted the best cookie (I usually make 6-8 different kinds each holiday). I will definitely make them again this year!

Would not make this again.
This cookie wasn't as flavorfull as I thought it would be. If I try it again, I'll use more lime juice and lime zest

Would make this again.
These came out great. I rolled some in coconut and that made the look of them even better. I also added a bit more lime juice and zest.
