Lemon Ice Bars


Makes about 24

1 cup brown sugar, packed
1/4 cup butter or margarine, softened
2 large eggs, slightly beaten
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup granola
1/3 cup chopped maraschino cherries, drained
Lemon Ice (recipe below)
additional maraschino cherries, cut into fourths and drained, for garnish

Pre-heat oven to 350 F and grease a 9"x9" square baking pan. Beat brown sugar, butter, eggs and vanilla until light and fluffy. Stir in flour, baking powder and salt until flour is moistened. Stir in granola and chopped cherries. Pour into prepared pan. Bake 30 to 35 minutes or until a toothpick inserted into the center comes out clean. Cool completely on wire rack. Frost with Lemon Ice. Cut into bars, about 2"x1-1/2". Decorate with quartered maraschino cherries.

Lemon Ice

2/3 cup powdered sugar
1 tablespoon fresh lemon juice
1 tablespoon butter or margarine, softened
1 teaspoon grated lemon zest

Beat all ingredients until smooth and creamy. If mixture seems dry, gradually add a little more lemon juice.

Would make this again.
I love lemon bars and thought this would be great. I thought they were good but I have made better ones before. Please do make these. My guests thought they were very good. four stars
