A flat and chewy sugar cookie topped with icing and a marshmallow head to give the impression that the snowmen are melting. A cute project for the kids!

Ingredients

  • For the cookies
  • 2-3/4 all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • pinch salt

  • 1 cup unsalted butter, at room temperature

  • 1-1/2 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 3 tablespoons buttermilk (or 3 tablespoons milk with 1 teaspoon of vinegar – let sit until the milk curdles before adding to the recipe)

  • For the icing
  • 2-1/2 cups powdered sugar

  • 2 tablespoons water

  • 1 tablespoon butter, softened

  • 1 tablespoon light corn syrup

  • 1/2 teaspoon vanilla or almond extract

  • For decorations
  • 16 large marshmallows

  • 1 black food coloring pen

  • 1 orange food coloring pen

  • 1 tube red decorator’s icing

  • 1 tube black decorator’s icing

Directions

  • Make the cookies
  • Preheat oven to 375F and line a baking sheet with parchment paper. In a large mixing bowl, beat together butter and sugar until creamy. Beat in egg and vanilla. In a medium mixing bowl combine flour, baking soda, baking powder and whisk with pinch of salt. Blend the flour mixture into the butter mixture, adding the buttermilk to moisten. With a heaping medium (2 tablespoon) cookie scoop, form cookies into mounds and place on baking sheet, 3 inches apart. Flatten slightly. Bake for about 12 minutes or until edges are lightly golden. Cool for 3-5 minutes on the pan. Cookies should spread and flatten, but if they do not, press down gently until they are flat. Remove to wire racks to cool completely.
  • Make snowman heads
  • With black and orange food coloring pens, draw black eyes and mouths and an orange carrot nose on each marshmallow. Set aside.
  • Make the icing
  • Combine powdered sugar, water, 1 tablespoon butter, corn syrup and 1/2 teaspoon vanilla in small mixer bowl; mix until powdered sugar is moistened. Beat at medium speed until smooth, adding additional water if necessary, little by little, to reach desired consistency.
  • Decorate the cookies
  • Place icing in a piping bag and pipe an irregular “puddle” on each cookie. Top with a snowman head while icing is still wet enough to stick. Allow to dry. Once icing is dry, with the decorator’s icing tubes, pipe a red scarf around the snowman’s neck, and pipe black buttons and stick hands.
