These are a nice dense oatmeal bar topped with either a buttercream frosting, or cream cheese frosting (your choice!). Top with seasonal sprinkles or chopped nuts.
Ingredients
- For the bars
3/4 cup unsalted butter, at room temperature
3/4 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2-1/2 cups old-fashioned rolled oats (not quick oats!)
1-1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
sprinkles (pictured) or chopped nuts of choice, for garnish

half recipe of our Stable “Buttercream” Frosting (pictured), or full recipe of our Cream Cheese Frosting.
Directions
- Preheat oven to 350° and grease an 8-inch square baking pan. In a large bowl, beat the butter and sugars until light and fluffy. Stir in eggs and vanilla and mix well. In a second bowl, stir together the oats, flour, baking powder, salt, and cinnamon. Stir the oat mixture into the butter mixture until just combined; do not over-mix. Spread dough evenly into prepared pan. Bake 25 to 30 minutes or until a toothpick inserted into the center comes out clean. Cool completely and then cut into bars. When completely cooled, frost with a half recipe of our Stable “Buttercream” Frosting (pictured) or a full recipe of our Cream Cheese Frosting. For a whiter frosting, use the Stable Buttercream Recipe but use white shortening or half white shortening and half butter (pictured). If desired, use sprinkles (pictured) or chopped nuts to decorate. Cut into 2″ squares.
