Ingredients

  • For the bars:
  • 1 cup vegetable oil

  • 4 large eggs

  • 2 cups granulated sugar

  • 2 cups canned pumpkin

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 teaspoon baking powder

  • 2 teaspoon ground cinnamon

  • 2 cups all-purpose flour

  • For the frosting:
  • 3 ounces cream cheese, softened

  • 6 tablespoons margarine, softened

  • 1 teaspoon milk

  • 1 teaspoon vanilla extract

  • 2 cups powdered sugar

Directions

  • Make the bars:
  • Preheat oven to 350F. In a large mixing bowl, beat together oil, eggs and sugar until mixture is creamy. Add remaining bar ingredients and mix well. Pour batter into an ungreased 15 x 10-inch jelly roll pan. Bake 20 to 25 minutes. Cool completely.
  • Make the frosting:
  • beat together all the frosting ingredients until creamy. Spread on cooled, uncut bars. After frosting has set, cut into equal size bars. Store any leftover bars, covered, in the refrigerator.
