Any easy, cake-like pumpkin bar spread with cream cheese frosting. A simple and tasty dessert to feed a crowd!

Ingredients

  • For the bars:
  • 1 cup vegetable oil

  • 4 large eggs

  • 2 cups granulated sugar

  • 2 cups canned pumpkin

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 teaspoon baking powder

  • 2 teaspoon ground cinnamon

  • 2 cups all-purpose flour

  • For the frosting:
  • 3 ounces cream cheese, softened

  • 6 tablespoons margarine, softened

  • 1 teaspoon milk

  • 1 teaspoon vanilla extract

  • 2 cups powdered sugar

  • Garnish (optional)
  • sprinkles or chopped nuts

Directions

  • Make the bars:
  • Preheat oven to 350F. In a large mixing bowl, beat together oil, eggs and sugar until mixture is creamy. Add remaining bar ingredients and mix well. Pour batter into an ungreased 15 x 10-inch jelly roll pan. Bake 20 to 25 minutes. Cool completely.
  • Make the frosting:
  • beat together all the frosting ingredients until creamy. Spread on cooled, uncut bars. If desired, garnish with sprinkles or chopped nuts. After frosting has set, cut into equal size bars. Store any leftover bars, covered, in the refrigerator.
