A moist bar with a shortbread crust and a nutty, chocolate chip filling. You can use almost any nut for this bar. Pecans are used in the photo, but you can use walnuts, peanuts, or even a nut mixture.
Ingredients
1-1/2 cups all-purpose flour
1/2 cup cold butter, chopped into small cubes
1/4 cup packed brown sugar
3 large eggs
3/4 cup corn syrup
3/4 cup granulated sugar
2 tablespoons butter, melted
1 teaspoon vanilla extract
1-1/2 cups semi-sweet chocolate chips
2 cups chopped nuts of choice (pictured: pecan)
Directions
- Preheat oven to 350F and grease a 9×13-inch baking pan. In a food processor combine flour, butter and brown sugar until a dough crumbles and begins to come together. Press this mixture into the prepared baking pan. Bake the crust for about 13 minutes or until it begins to look golden. Remove from oven. In a large mixing bowl, combine the eggs, corn syrup, granulated sugar and vanilla. Stir in butter, chocolate chips and nuts. Pour this mixutre over the crust. Bake about 25 minutes or until set. Cool on a wire rack and cut into bars when cooled.
