Makes about 72
1-1/4 cups butter
2/3 cup granulated sugar
1 teaspoon vanilla
2 cups all-purpose flour
1/8 teaspoon salt
1/2 cup cocoa powder
2 cups pecans, finely chopped
sifted confectioners' sugar
Cream together butter and sugar until fluffy. Add vanilla. Sift together flour, salt and cocoa. Gradually beat dry ingredients into creamed mixture.
Blend in pecans, mixing well. Cover bowl and put in refrigerator for several hours, or until dough is firm. Form dough into balls about 1 inch in diameter, rolling between palms of hands.
Place about 1 inch apart on ungreased cookie sheet. Bake in a 350 degree oven for approximately 20 minutes. Cool cookies, then roll in sifted confectioners sugar.

Would make this again.
I LOVE these cookies! They're fun to make, turned out perfectly, and are absolutely delicious. I improvised and made them 'adult' cookies by dipping them in either Grand Marnier or Light Rum after they were baked and cooled. Just a quick dip all around so the rum and GM could soak in just a tiny bit. I let them sit for just a few minutes until the alc. had soaked in and then sprinkled the sugar on top. OMG, YUM-BELIEVABLE! You could easily add other flavors to the dough. I was thinking maybe some mint essence, or orange, or even something like hazelnut. I think I'm going to make another batch before the week is out and experiment a little more. Have fun with these! 5 stars
