Lime and coconut make a perfect marriage in this powdered-sugar coated cookie.
Ingredients
1-1/4 cups granulated sugar
1 cup solid vegetable shortening
2 large eggs
1/4 cup light corn syrup
1 teaspoon vanilla
2 tablespoons fresh lime juice
2 tablespoons grated lime zest, about 2 limes
3 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup flaked sweetened coconut
powdered sugar
Directions
- Combine sugar and shortening in large bowl and beat at medium speed of electric mixer until well blended. Add eggs, syrup, vanilla, lime juice and zest. Beat until well blended and fluffy. Combine flour, baking powder, soda and salt. Add gradually to creamed mixture at low speed and mix until well blended. Stir in coconut. Wrap dough in plastic wrap and refrigerate at least 1 hour.
- Pre-heat oven to 375 F. Shape dough into 1-inch balls. Place 2 inches apart on ungreased baking sheet. Bake for 5 to 7 minutes. Don’t overbake. Cool 2 minutes on baking sheet and then remove to sheets of foil laid out on the countertop. Dust with powdered sugar and cool completely.
