These are a simple cookie using healthier ingredients. A healthier, low-guilt everyday snack option with lower fat and sugar.

Ingredients

  • 1 cup non-hydrogenated margarine

  • 1/2 cup sugar or 1:1 sugar substitute suitable for baking

  • 1/4 cup Egg Beaters

  • 1-1/2 teaspoons vanilla extract

  • 3 cups whole wheat pastry flour

  • 1/2 cup oat bran or wheat bran

  • 1-1/4 teaspoons baking powder

  • 1 cup chocolate chips (dark chocolate, sugar-free chocolate chips, or chopped sugar-free chocolate bar, pictured)

Directions

  • Preheat oven to 375F. Blend butter & sugar until fluffy. Add egg & vanilla, mix until just combined. Add flour, bran, and baking powder in intervals. Stir in chocolate chips. Shape into 1-1/2″ balls and place on ungreased cookie sheet. Bake 10 minutes or until lightly browned. Remove from oven, let cool for one minute and then transfer to wire rack. Allow cookie sheet to cool thoroughly before placing uncooked dough on it.

I really do not like these cookies. They are super dry and plain. I added peanut butter to the second half of the batter, so hopefully those have a bit more flavor.

I didn't like these as they seemed to be dry and tasteless. Although it was easy to make the dough, they were not a hit at our house.

I loved this cookie and so did my family members. They agreed that you could eat a couple of these cookies without that sugary-sweet taste. I used 3/4 cup butter and a little fructose with the sugar. Also, I used 2 large eggs instead of the beaters. Yum!
