1/4 cup packed brown sugar
2 tablespoons shortening
3 tablespoons cold water
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1 cup granulated sugar
1 tablespoon grated lemon peel
3 tablespoons lemon juice
1/4 teaspoon baking powder
1/4 teaspoon salt
3 eggs

Grease 13x9x2-inch rectangular pan. Press in bottom and 1/4 inch up sides of pan. Bake 10 minutes. These TASTE okay, but I would like a more chewy (less caky) gingerbread. Also they're not a reat 'presentation' cookie, as the lemon filling is not set or yellow, just sort of 'there.' Taste great but I won't make 'em again. 3 stars

These were OK but next time I would only put the gingerbread layer on the bottom, not up the sides. It made the sides as hard as a rock. Otherwise these were good. 3 stars

Made these today. I wasn't thrilled but my hubby was. He wants to see them as sandwich cookies with gingerbread on the top and bottom of the lemon filling.
If you've got a family member who loves the taste of gingerbread, these might be worth a look. Expect to spend a lot of energy spreading the gingerbread, it took me 20 minutes...
Maybe a touch more spice too, the gingerbread flavor wasn't very strong.
3 stars
