A teacake-type cookie with walnuts and brandy flavor.

Ingredients

  • 1/2 cup butter, softened

  • 1/2 cup powdered sugar, sifted (measure first, then sift)

  • 1/8 teaspoon salt

  • 1 tablespoon + 1 teaspoon brandy

  • 1 teaspoon vanilla

  • 1 cup flour, sifted (measure first, then sift)

  • 1/2 cup finely chopped walnuts

  • additional powdered sugar

Directions

  • Preheat oven to 325 F. Cream together butter, sugar and salt until fluffy. Stir in brandy and vanilla; add flour and nuts, mixing well. Shape into 3/4-inch balls. (Recommended: chill for 30 minutes on baking sheets before baking). Bake on un greased cookie sheet for 20 minutes or until lightly browned. Roll in additional powdered sugar when cool.

I tried this recipe twice following the directions to a T. Each time, I ended up with flat cookies. So disappointing

Easy, different, and delicious. I recommend chilling the balls prior to baking to maintain ball shape. 325 is a low temp for cookies, but perhaps necessary to get the middle of the ball cooked without burning outside. However this can also let the butter melt and spread the cookie before the outside has the chance to crust over. Chilling solidifies the butter again and gives the cookie more time.
