Jon, I've been making these for years, following the Libbys brand recipe. I would suggest that you cook the cake until it springs back from touching. You don't want to wait until the toothpick comes out clean like stated. Also, the towel you roll it in I don't bother with the powdered sugar on it. I dampen the towel just a little bit and squeeze ALL the excess water out. I only have cracks when I rush, so this should help! 4 stars

Our family has food allergies, so we made this with Better Batter gluten-free flour. It was fantastic - you couldn't tell it wasn't wheat flour. Great recipe! 5 stars
