Peanut butter Rice Krispie treat-type balls dipped in chocolate.

Ingredients

  • 1 (18 ounce size) jar of peanut butter

  • 2 cups Rice Krispies cereal

  • 1-1/2 cups powdered sugar

  • 1/4 teaspoon vanilla extract

  • 1 cup chocolate chips

  • chopped peanuts or sprinkles (optional)

Directions

  • In a double boiler over low heat, melt chocolate and set aside. In a medium sized bowl, combine all other ingredients. Blend well until mixture forms a dough. Roll into 1-inch balls. Using a toothpick or fork, dip the balls into the chocolate until well coated. If desired, roll in chopped nuts or sprinkles. Place onto a cookie sheet lined with wax paper. Refrigerate for 30 minutes.

Easy, great fun for the kids, delicious. A tablespoon made about 4 dozen, two bite size balls... next time i will do 1/2 T one bite was plenty. I really hated the toothpick method yes they looked absolutely perfect but the time it took was painful...instead, i used a plastic fork, broke off the center tines, lightly tapped on the edge of the bowl removing excess, slid them onto ez foil (with the toothpick ..lol..) and the warm chocolate filled in any holes and they still hardened beautifully, also rolled, then separated the peanut butter balls into batches b/c they warm up quick. coated about a dozen at a time left the rest in the fridge... and powdered sugar on your hands helps keep the mess to a minimum.. i also made mine festive Happy baking

They're very messy to make & you need to make them in stages (giving time to freeze), but they are amazingly delicious!

I have made these every Christmas for the past 6 years! Everybody "rants and raves" about them and always wants the recipe. I add just a touch more powdered sugar, roll them into balls and place on a cookie sheet, put in freezer for 10 min (they will be so easy to dip once cold and the chocolate will harder quickly). I also use the milk chocolate melting wafers from Michaels or AC Moore(their chocolate tastes better than melting the chocolate chips). I am now famous for making these!

I formed the peanutbutter balls using flour on my fingers, it kept the dough from sticking,then I put the tray in the freezer until the balls were solid. I used a higher grade dark chocoate like Ghirardelli. I also needed to heat the chocolate several times to thin it out. I doubled the recipe, made the balls smaller than an inch...very rich, it made 94 balls.
