This wonderful cookie is delicate and light with a nice fresh taste of any jello flavor you like!
Makes about 24
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1-1/2 cup salted butter (softened)
1 cup granulated sugar
1 large egg
1 teaspoon vanilla
4 (3-ounce) packages jello (any flavor)
food coloring (optional)
Pre-heat oven to 350F and line baking sheets with parchment paper or silicone baking mats.
Beat butter in large bowl with mixer until creamy. Add sugar and beat until light and fluffy. Blend in egg and vanilla. Mix flour and baking powder in a separate bowl. Gradually beat in flour mixture.
Divide dough into 4 sections. Sprinkle 2 tablespoons of jello onto each section. Knead together with dough. You may want to add a few drops of food coloring to make the dough more vibrant.
Shape dough into 1-inch balls. Roll in the extra jello from the packets. Place, 2 inches apart, on baking sheets. Flatten with bottom of bowl.
Bake 8 to 10 minutes on lined baking sheets. Cool on baking sheets 2 minutes, then remove to wire racks and cool completely.
Note: From Rachel Ganimia: "This is my boyfriends favorite recipe. His mom lives in Arizona and he lives in Massachusetts. I asked her to send me the recipe a couple of years ago (and she did) but I promptly lost it. I was able to finagle the ingredients so that he says these are the most like his mom's!"

Would make this again.
My mother made these every year. She used cherry and lime jello to make the cookies more festive. 5 stars
