Makes about 72
Beat together butter and sugars until creamy. Beat in egg and vanilla. Blend in dry ingredients. Regrigerate about 1 hour or until firm. Pre-heat oven to 350 F. Shape dough into 1-inch balls and place on ungreased baking sheets. Flatten slightly with the bottom of a glass covered with a damp cloth. Brush the top of the cookies with the egg white and sprinkle with the extra granulated sugar or cinnamon sugar. Bake about 12 minutes. Let cool for one minute then remove to wire racks to cool.

Would make this again.
This recipe sounded like those almond cookies they give you at Chinese restaurants... but it is so much better! There's no reference to when to put the almonds on the cookies so I put one on top before I put on the egg white. I only cooked for 9 minutes and they came out perfect! Great recipe!
