Graham Sandwiches


2 (12-ounce) packages chocolate chips
1/2 (2 ounces) block Paro wax
1 (14.4-ouce) box graham crackers
1 (18-ouce) can prepared milk chocolate frosting
1 cup fine unsweetened coconut

Break crackers into quarters (where scored). Mix coconut and icing together until well blended. Spread a layer of icing mixture onto a cracker and top with another cracker.

In the top of a double boiler over hot (not boiling) water, melt chocolate chips and wax. Using tongs, dip each sandwich in melted chocolate to cover. Place sandwiches on waxed paper and refrigerate until chocolate is set.
