1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 1/2 teaspoon vanilla
2 cups flour
2 1/2 cups blended oatmeal (blend in a blender to a fine powder)
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
12 oz. chocolate chips
4 oz. hershey bar (grated)
1 1/2 cups chopped nuts
Preheat oven to 375 degrees. Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder and baking soda. Add chocolate chips, hershey bar, and nuts. Roll into balls, and place 2 inches apart on an ungreased cookie sheet. Bake for 10 or 11 minutes.

I first saw this recipe 10 years ago and it included 2 tablespoons of instant coffee. That was incredible, but over the years I have opted to drop the 4 oz. grated Hersey bar and instant coffee and replaced them with 5 oz. of dark chocalate covered coffee beans. Gave the cookies a great java kick as well as a depth of flavor. The dark chocolate compliments the coffee flavor beautifully. 5 stars

Super good cookie! Every bite is worth making it. But I get the hardest time grating the Hershey's bar, it melts in my fingers. How have you been grating your Hershey bars? 5 stars

This is one of the best cookie recipes I've ever used. My family and friends love them. They are rich and soft and go very quickly around here. 5 stars
