Preheat your waffle iron. In a large mixing bowl beat sugar and butter until light and fluffy. Beat in in eggs, pumpkin, and vanilla. In another bowl, stir together flour, salt, baking powder and spices. Stir flour mixture into butter mixture until well blended. Add dried cranberries, nuts, and/or chocolate chips, if desired. Drop by tablespoons onto heated waffle iron, 1" apart. Close lid and bake for 90 seconds. Remove with a fork and allow to cool completely on a wire rack.

Would not make this again.
My kids and I had fun trying this out. However, I would not make this again. The cookies were a bit dry and cakey. I ended up putting a icing on them for more taste. I think it could have used more sugar.
