A recipe I developed when I wanted chocolate chip cookies but not the guilt usually associated with them!
Makes about 301 cup non-hydrogenated margarine
1/2 cup sugar or sugar substitute
1/4 cup Egg Beaters
1 1/2 teaspoons vanilla
3 cups whole wheat pastry flour
1/2 cup oat bran or wheat bran
1-1/4 teaspoons baking powder
1 cup chocolate chips
Preheat oven to 375F. Blend butter & sugar until fluffy. Add egg & vanilla, mix until just combined. Add flour, bran, and baking powder in intervals. Stir in chocolate chips. Shape into 1-1/2" balls and place on ungreased cookie sheet. Bake 10 minutes or until lightly browned. Remove from oven, let cool for one minute and then transfer to wire rack. Allow cookie sheet to cool thoroughly before placing uncooked dough on it.

I didn't like these as they seemed to be dry and tasteless. Although it was easy to make the dough, they were not a hit at our house.
