Wacky Cake

An easy, non-dairy, no-egg cake that is surprisingly moist. A vintage recipe from WWII days, when milk and eggs were rationed.

1 1/2 cups of flour
1 cup of sugar
3 tablespoons cocoa
1 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons vegetable oil or melted shortening
1 tablespoon vinegar
1 teaspoon vanilla
1 cup cold water

Preheat oven to 350 F. Sift all dry
ingredients into an ungreased 9x9-inch cake pan. Make a well in the center and pour the oil, vinegar, vanilla and cold water into it. The
combination will start to bubble. Mix with a fork until well combined. Don't worry if there are a few lumps, avoid overmixing. Bake for 25 to 30
minutes. Let cake cool completely in the pan.
Sprinkle with powdered sugar if desired.
Cut into squares to serve. Or, bake in an 8x8-inch pan for 35-40 minutes. For a 9x13-inch pan, double the ingredient amounts and bake for 45 mins to 1 hour.

Would make this again.
This was a childhood favorite that was lost for many years...so happy i found it again. If you think there isn't enough chocolate use heaping not level tsps. Also great with a creamcheese frosting. five stars

I learned to make this in junior high, and have been making it ever since. This may not be the one for someone craving a lot of chocolate ,but it is very versatile for all diets. Those that like choc.,try using melted choc. chips with a little powdered sugar for frosting. Those who need less fat, leave plain.
This is a great recipe to keep on hand,as,we have all been caught off gaurd, with no treat or desert to make for those unexpected guests. It is very inexpensive, and most ingredients can be found in every kitchen.Very moist and delicious cake, and can be made in vanilla as well! five stars

It's FABULOUS!!! I'm allergic to everything on the planet, and this not only fits my dietary needs, but it tastes good, too!!

My mother-in-law makes this. The only good thing about it is that it is very moist. I think it is otherwise very bland. I like rich chocolate. I would not recommend this to anyone. two stars
